The Serrano family, based in the community of Toroqmayo in Juyhuay, Calca province, Cusco, Peru, has been producing coffee for generations. Placido and Lucrecia Serrano, alongside their sons Isauro and Rolando, manage 4 hectares of coffee farms using sustainable agroforestry practices. These farms are located within the Lacco Valley, a region that forms part of the Manu Biosphere Reserve in the Tropical Andes, an area renowned for its biodiversity and ideal coffee-growing conditions, including high altitudes, ample rainfall, and nutrient-rich soils. 

The coffee is processed using the washed method to ensure high quality and consistency. Coffee cherries are carefully harvested and then fermented aerobically in traditional ceramic pits for 48 to 72 hours. This process allows natural enzymes to develop, enhancing the coffee’s unique flavor profile. Once fermentation is complete, the cherries are depulped and dried on shaded raised beds for 10 to 20 days, preserving their integrity and ensuring exceptional cup quality. 

The cooperative to which the Serrano family belongs was established in 2021 and formally constituted in April 2022. It unites over 130 small-scale farms, each under 5 hectares, in the region. Over the past three years, the cooperative has helped its members increase coffee production by an average of 10% annually, while improving income by 11% compared to previous baselines. These improvements are the result of collaborative efforts, access to training, and the adoption of sustainable practices. 

The Lacco Valley region is part of the Manu Biosphere Reserve, one of the world’s most ecologically significant areas. Here, coffee farming serves as a sustainable land-use practice that supports biodiversity conservation. The Serrano family, along with other producers, has participated in initiatives led by the Andean Alliance for Sustainable Development. These projects focus on improving agricultural techniques, such as the implementation of demonstration farms aimed at enhancing biodiversity, water efficiency, and organic production.
