Marcio Nogueira, as part of a third generation agricultural business, continues the work his grandfathers Francisco Mauricio and Maria de Amorim Nogueira initiated in the Caparaó region more than 70 years ago. At that time there were almost no coffee plantations in the region. Marcio's father Josias Nogueira, 84, says that everything was still a lot of pasture when he arrived in Caparaó at the age of 13. Today, organization and planning are key to the coffee harvest. While Marcio and his brother Gilmar Nogueira manually harvest the cherries, their wives Aparecida and Henry cover the floor with a cloth, so the cherries avoid contact with the ground and remove certain impurities such as leaves and small twigs by hand. They transfer cherries daily to drying patios, where they are exposed to the sun and turned throughout the day to avoid any improper fermentation, which could compromise quality. After 3 to 4 days on the patio, cherries are finished in the rotary dryer. Monitored drying is a fundamental process, where cherries are exposed to controlled heat during the day and cooler nights. Allowing coffee cherries to “rest” helps preserve the quality, comments Marcio.
